01 - 4 slices sourdough bread
02 - 4 tablespoons unsalted butter, softened
03 - 4 slices sharp cheddar cheese
04 - 2 slices Monterey Jack cheese
→ Vegetables & Peppers
05 - 2 tablespoons canned chipotle peppers in adobo, finely chopped
06 - 2 tablespoons pickled jalapeños, sliced
→ Condiments & Extras
07 - 1 tablespoon mayonnaise
# Directions:
01 - Preheat a skillet or grill pan over medium heat.
02 - Spread 1 tablespoon of softened unsalted butter evenly on one side of each bread slice.
03 - Place two slices of bread, buttered side down, onto a cutting board. Layer each with two slices of sharp cheddar, one slice of Monterey Jack, half the chopped chipotle peppers, and the pickled jalapeños if desired.
04 - If desired, spread a thin layer of mayonnaise on the unbuttered side of the remaining two bread slices to enhance crispness.
05 - Top the prepared cheese layers with the remaining bread slices, buttered side facing up.
06 - Transfer assembled sandwiches to the preheated skillet. Cook for 3 to 4 minutes per side, gently pressing and flipping once, until bread is golden brown and cheese is melted.
07 - Using a sharp knife, slice each sandwich and serve immediately while hot.
