Strawberry Pineapple Daiquiri (Printer Friendly)

A vibrant, fruity blend of strawberry and pineapple, chilled and ready to enjoy anytime.

# What You Need:

→ Fruit

01 - 2 cups fresh or frozen strawberries, hulled
02 - 1 cup fresh or frozen pineapple chunks

→ Liquids

03 - 1 cup white rum
04 - 1/2 cup fresh lime juice (approximately 4 limes)
05 - 1/2 cup simple syrup
06 - 1/2 cup water

→ Optional

07 - 1 tablespoon agave syrup or honey for additional sweetness

# Directions:

01 - Combine strawberries, pineapple, rum, lime juice, simple syrup, and water in blender. Process until completely smooth. Taste and adjust sweetness as needed.
02 - Distribute blended mixture evenly into 6 resealable freezer-safe pouches, filling each approximately 2/3 cup. Seal tightly and press out excess air.
03 - Lay pouches flat in freezer and freeze for minimum 6 hours until completely solid.
04 - Remove pouch from freezer. Gently knead or run under warm water briefly to soften. Pour into glass or serve directly from pouch with straw.

# Pro Advice:

01 -
  • You can make these days ahead, which means you're basically a relaxed host instead of frantically mixing drinks while everyone's already hot and thirsty.
  • The texture is silky and thick, not watered down by regular ice, because you're freezing the liquid itself.
  • Everyone gets a perfectly balanced cocktail without you having to play bartender all afternoon.
02 -
  • The first time I made these, I overfilled the pouches and they burst in the freezer, which taught me that leaving headspace really does matter when liquids expand.
  • I learned the hard way that frozen rum drinks still taste boozy even when they're ice cold, so don't judge the flavor until it's slightly softened and you can actually taste all the layers.
03 -
  • Blend everything the night before if you're throwing a party, because this takes the stress out of the day and you can just pour and freeze.
  • Keep extra simple syrup in the fridge so you can make last-minute batches without any prep work, which is honestly what separates the relaxed hosts from the frazzled ones.
